FAQ #1 "Do Not Preheat Oven Before Use" ... Why?
When you put your homemade bread into an unheated oven, and then turn the oven on set at the temperature that the recipe calls for, the pan has a chance to heat gradually. The purpose of this is to reduce the chance of thermal shock which could cause the pan to crack if it heated too fast.
The wonderful thing about baking in stoneware, though, is that once the pan heats up it retains the heat so well that it, in effect, radiates heat back to the bread. The total baking time is about the same as what a recipe calls for when preheating the oven is called for. An added benefit of baking bread in a stoneware pan is that the crust comes out perfect (much better than baking in metal or pyrex).

Our pottery is made of a strong, durable stoneware clay that we have formulated and make ourselves. Quite simply, it's tough. You can use it in the microwave and put it in the dishwasher without being concerned about damaging it in any way. Should it become especially soiled during regular use or in the oven, in the case of our several ovenware pots, go ahead and scour it with household cleanser, or soak it with a solution of bleach and water.
